OK, looking at these drawer slides https://www.accuride.com/en-us/products/3732

Can someone explain to me why it's for drawers "up to 16" wide"? What happens if the drawers are wider, let's say 21"?

They'll be a little wobbly if you pull it from side to side.
Fwiw, we use chinese versions of the 3832, which also specifies "up to 16", for drawers up to 30" wide regularly, in commercial cabinets, with no problems.

Personally, I prefer KV 8400's, as they've always seemed much smoother to me.

They usually put a width limit because if you pull the drawer from one side on a wider drawer, the metal of the slide will deflect and the slide will pop out of the track. Heavier duty slides don't tend to do that.
