After shellak as grain filler

Good morning to all. Thank you for all your help with finishing my dining table top. My table is walnut and the top coat will be Waterlox I have the last set of 3 coats of shellac on and ready to sand back. Do I need to sand all the shellac off leaving it only in the grain / pores?

yes or just sand back the shellac till its all flat no shinny spots. shinny spots = low spots.
