I grind my own knives and have two of a set of four with a deep chip, or at least deeper than I want to grind out. Any one know a reason I can't mix the better two in with a new set, and just loose the chipped pair?

I would use all of them. You can sharpen the chipped ones without removing the damage, and eventually lose the chips.

If you offset the damaged areas, it will not show on the work.

This. Just offset each blade with each other. Overtime you'll eventually sharpen the chip out as well.
