I have never seen anyone use Yellow Birch for a cutting board before. Can anyone give me a good reason why it would not be OK for this purpose?

I want to make a cutting board for my wife, and I was thinking of using this as one of the woods. I simply can not think of any reason why it would not work. Anyone ever used it for this purpose?

Also have any of you used any exotic woods for a cutting board?

Here Mike....take a look at Vaughn McMillan's stuff. http://www.sawmillcreek.org/showthread.php?t=23080

I think Yellow Birch will work fine as long as you are using "like densities" in your combinations.
