What wood should I avoid if I want to serve food in it.

Avoid woods in the rosewood family is all that comes to my mind. I don't think native American hardwoods would be a problem. Woods with small pores will be easier to keep clean; Maple, Birch, Sycamore, Black Gum, Pear would be at the top of my list. Pecan, Hickory, Walnut, Elm, White Oak ; probably lots of others would be OK for most uses. Red Oak or Ash would not be great for liquids but otherwise OK.
