Hi-
I'm about to take a beginning carving class. I've come by some old German steel gauges whose bevel side is convex (instead of flat). When I do regular woodwork I use either a flat or hollow ground bevel on a chisel. How would I go about getting the convex bevel to flat (which I assume, perhaps incorrectly, it should be). I can't imagine that I could hold it steady enough (or have enough patience) while rocking the chisel to do this by hand on a stone. Thanks, in advance, for help and education.

Carving tools are not sharpened the same way as a bench chisel. Many carvers round the heal of their gouges also back bevel. Before you flatten your tools see Chris Pye's info on putting a tool into service.
Here is some info from youtube https://www.youtube.com/watch?v=JoEJX-Hsp88 this is not all there is to it.
