I need to some sort of protective/finish coat on my pine casement windows. I have heard that poly tends to yellow over time when in the sun. Are there any other alternatives?

All oil base finishes "yellow" because they start out that way and get a little darker over time. This is further defined by the fact that the wood, itself, gets darker and more yellow from oxidation and exposure to UV. You cannot stop the latter, but could use a water-bourne product to minimize the color shift from the finish.

I've had very good luck with Minwax's Poly Acrylic on pine. (It's waterbased as Jim pointed out) It goes on clear and stays clear. Although, I don't have any data on longevity since the oldest piece I have is about 2 years old.
