The specs say it will take up to 6" thick. For a 10q maple board that is 5" wide / is it "okay" to orient the board so that the 5" width is orientated vertical? Material is maple and 4 foot long.

Yes. There is plenty of stock to keep it vertical.

Yes, I do that with much thinner stock. I've never had one kick back on me (but I don't stand in the line of fire just to be sure :)).

I have done that too but I used a jointer to make sure the side and edge were perpendicular first. I sometimes use my planer this way when I want to resize several pieces to be exactly the same width. I think it is safer and easier than ripping narrow stock such as stiles and rails to final width on a table saw.

I'm refinishing a redwood outdoor table and did that very same thing this afternoon with the table top boards on my 735. They are about 2x6"s and I ran them through on edge to assure equal width. Shouldn't be any problem.
