Allright.. which is the A side, and which is the 2 side? What do you think?

Also is it always static.. for instance. The side where where you can see the horizontal linear veneer stacking. Is that always the good or the bad? vs the otherside which looks more rotary?

Look for any writing on the edges. Typically if you can read the writing the good side is facing up.

The better side is the one you like better.

On your pictured piece, the manufacturer would likely consider the plainsawn face the front, and the rotary cut face the back side.

If I'm putting up a large panel, I try for fewer seams or patches.

I'm I'm putting up a smaller panel, I use the one with more seams
for maximum yield. Where possible, I try to "wrap" the grain around the cabinet.
