Any good recipes for chicken wings in the smoker.
How long to smoke, what rub etc....

I've smoked a lot of meats but never wings. When I smoke whole chickens the wings are too dried out to be used.

mu opinion only but chicken wings taste best when cooked in oil and then kept warm on the barbecue.

I don't have a recipe per se, but when I've done them, I've used a rub (google Memphis Dust, e.g.--I use about 1/4C for a flat of wings) then smoked them for an hour at 225F. The smoker at 225F doesn't do much to crisp up the skin, so I'll then throw them in the oven at 350-400F for 15 min. or so to get the texture I'd like (alternative would be a quick fry). Then I toss them in wing sauce (I tend to use a 50/50 mix of butter and Frank's Hot Sauce) and serve them right away before the wing sauce de-crisps them.

when you smokes the wings, what do you smoke the chicken body too ?

I did wings a couple times last year on my smoker and everyone really liked the way they turned out. I buy the family pack that Kroger sells, probably about 20 wings. I split them into two ziplock bags the night before and shake in enough of my standard rub to coat them well and refrigerate overnight. I get them out about 30 minutes before I want to put them on and let them come to room temperature. I smoke them at about 200 to 220 degrees for about 2 hours using hardwood charcoal and cherry wood from our property. I turn them over about half way thru and switch them, hot to cold end. We don't even use sauce on them, good enough by themselves.

I was going to give it a try today but got sidetracked doing other things. Starting with a cold rain about time I was ready to start. Enough to make me hold off till next weekend.
