I am building a cabinet with inset doors and using soft closing European hinges. The problem I am having is the doors close past the front of the cabinet by 2 inches or so. Is there an adjustment to change how far the door travels. If not how do I fix it.

Euro hinges expect to close against something -- usually part of the casework. The soft-close aspect just slows the closing action. It doesn't stop the door. Fasten a stop to the casework so the door closes against the stop.

Thank you that thought crossed my mind I just wasn't sure if there was an adjustment I didn't know about

I just stumbled across these FastCap Euro Door Stops (https://www.fastcap.com/estore/pc/Euro-Door-Stop-p13233.htm) today.
