The face frame and raised panel door are to be made of either African mahogany or Sapele.

What's the difference between the two. Is one or the other easier to work with? More stable ect? I'll be doing my own stock prep.

Ribbon Sapele is likely to fracture along the juncture between "bands" of interlocking grain.
I wouldn't use it as a solid surface, without cross battens to spread loads.

As a veneer, it's excellent - but can finnicky about surface prep.
I can only get a decent surface by sanding.

That's a lot of sanding, for a bathroom.
