I'd like to use my Veritas MKII, but it's been a while. I know I used to have a how-to video of some sort, but I can't find it. Does anyone have a link to a how-to on this power sharpener?

Do a search on You Tube for "Veritas MKII" there are a ton of them.

There seem to be lots of MKII Shapening videos using the non power system, but only one using the Power system and I don't seem to be able to access that video at all. Maybe I'm missing something.
