We are starting to restore an old walnut table and found that is has some patterns formed in the surface. It looks like holes were punched and pieces of a lighter pieces of wood were driven into the holes. A photo is attached. It has been lightly sanded at the bottom of the photo.

Questions:
1: What is the name of this technique? I would like to read up on it on the internet.
2: How deep are we likely be able to sand without losing the pattern?

We found a place at the edge of a board where could see the depth of the wood. It was about 1/8" deep so we can sand off quite a bit of wood without destroying the pattern. I still don't know the name of this technique.
