I have a Baldor 6" high speed grinder. Does anyone know if it's possible to slow it down(to say, 1750rpms)without harming the motor?

Assuming US 60Hz power:

A 3600rpm induction motor, which runs about 3450rpm at rated load, has 2 poles on the armature. A 1800rpm induction motor, which runs about 1725rpm at rated load, has 4 poles on the armature.

You can't change the number of poles on the armature, so your only option is to feed it 30Hz electricity. Not impossible but pretty difficult.

Are you trying to slow it down for sharpening? If so, I honestly don't think it really makes that much difference to be worth trying to slow it down ... especially since the rim speed on a 6" wheel isn't that fast compared to larger grinders. I'd leave it and learn to use a lighter touch, which you still need at 1750.

Simple answer is no. It is what it is.
