I am working on the workbench top, and made a mistake, one of the laminate pieces were misaligned (for whatever reason), so I had to cut that part off and rejoin them so that they line up. While doing this with a circular saw I found the blade is too small, as in it won't cut all the way through the 2.5" thick top. There's no way I can wrestle the completed benchtop onto a bandsaw or tablesaw, so what do I do? The whole benchtop is going to weight probably 100lbs when complete.

If I understand your post you created a workbench and then laminated the top of workbench? If you want the laminate and the workbench to be completely aligned then I would pull out a router and a good flush trim bit that has a bearing that will ride against the workbench.

Make a collar that'll slide on to the top to use as a guide for the saw. Then you can cut from both sides. A little block plane work on the end of needed and you're finished.
