Using soft maple to turn this type of piece is a good choice. It cuts relatively clean and is fairly easy to sand. The tight grain takes detail beads and edges well. The wings are turned, and sanded before the inside is removed. Then, after the inside is turned, the blending of the two is completed. Most of the sanding to the wings and edges is done with the lathe stopped. I hold the power sander against my belly muscle and rock the wing back and forth. Two coats of Forby's gloss danish oil followed by couple coats of lacquer. Bowl is 13" wide and about 1 3/4" deep. It is 1/4" thick through out.
