I picked up about 200 square feet of 6 inch red oak flooring that I'd like to put on the wall instead of the floor.

What I'd like to do is ease the corners of the tongue and groove sides of the planks, not by much but just enough to show the lines between the planks after it's mounted.

What would be the best way to do this? Router in table or something like a Lee Valley Cornering Tool.

Or you could use a beading bit instead for a different look altogether.

A router works well, can be a problem on the tongue side. A trim router freehand is easier IME than a table because floor boards are not always straight enough to ride the fence well. Amana makes micro chamfer and easing bits that may ride above the tongue, they have a very small bearing. If the ease is small, a sharp block plane or a sanding block can be just the thing to, or as you said a dedicated easing tool.
