I've been contemplating purchasing a set of these. Just curious as to how they hold an edge, and how the flat handles feel? Thanks for any input.

I haven't used those....but will comment anyways :D .
edge holding - O1 steel will be fine. These are joint fitting chisels so you should only be shaving with them....again another factor saying edge retention won't be a huge issue. My experience with O1 steel as a cutter for wood is with my Knight planes....they get very sharp and hold their edge decently. I have no idea on the difference in hardneing between the Bebe made Chan chisels versus Knight's irons.
Handles....no comment as I've no clue.

I've got the skew chisels. very controllable and hold an edge very well.

Forgot to add about the handles. They took some getting used to in that there is no beef to them. Since they are designed to be used much like a knife you can forget your usual bash, hog and push. They are indeed used for detail work and shave a little at the time.
