Woodworking rookie here looking for some advice...

I'm building a bar, and have decided on Jatoba for the bar top. The samples / pictures I've seen of Jatoba seemed darker than my mine. So far, I've applied 3 coats of Varathane semi-gloss to a piece of scrap, but it's still not darkening up as much as I'd like. I want to avoid staining the wood, and I'm hopeful that there is something I can apply (oil / poly / ???) that will bring out the darker tones.

Any advice on how to bring out the deeper colors / darken the Jatoba?

What little I have used it. It appears to darken a little more with age. I have a few small objects made with it and a bar on the floor between two rooms.
All appear to be getting a little darker as time goes by. Coasters I make are real dark now. May be from water stains.
The floor bar is finished with poly I think. Just 2 coats.
