I have a few new hires and ran into an issue.......They hit the "save" instead of "save as" and renamed, so they save over a handful of my
templates and previous files....
Is there a way in Corel that I can disable the "save" and "force" a rename if they use a previous file?

I don't know about anything specific to Corel, but you could just mark the files you care about as read-only.

You could save them as a template then when they save them they are forced to rename

There's always the backup files, if they don't delete those you can go back and fix the mistake... for now.

Dee you can turn off the back up files in Corel I turn mine of but I also save to a cloud and then to a server so I have redundant copies in case of emergency
