In January we harvested a 150-200 year old pecan tree from our fathers yard. We lost the center due to termites.
However we did get some wonderful boards. I was able to get a 6" thick section for endgrain chopping boards that
will be given to family members. I will resaw into 2" thick slabs. The sizes vary from 6x12, to 12x16. I got the most
that I could, working around the termite damage. My question is, should I leave them it tact or cut it into blocks and glue them up like a traditional endgrain chopping board. My only concern is that they will start to check. I would perfer to keep them together to keep the grain in tact. But I will cut them up if it would be better. I have spent a lot
of time milling and storing these blocks. I do not want to make any mistakes. Thanks for all of your suggestions in

If you have a small section that could be used as a test run - try both.

I would recommend using an epoxy, such as West system (http://www.westsystem.com/ss/table-top-applications/) or System Three.
I believe the "scales" used to clad hand knives, guns and some chisels are epoxy impregnated.

The method of application is unknown to me, but the Blue Spruce chisels (http://www.bluesprucetoolworks.com/new/index.htm) have this treatment and the wood feels waxed, not plasticized.
