Walnut, Apple, Box Elder? & Willow Natural Edge Bowls

Here is a few natural edge bowls I've done recently. The willow doesn't have anything on it. The walnut has shellac and the apple has EEE ultra shine. The box elder I believe it is has eee ultra shine on it. What would you do to the willow? What is the best finish for natural edge bowls.
