I want to use a sliding dovetail to join two pieces of wood in parallel. The plan is to make a bowl from a board with the dovetail joints in the middle. How can I assure that the dovetail is in the middle of the boards? If not the boards won't be even and I guess I would have to run them through the planer a few times.

If you want it perfect, practice on scrap until you get it right.

If the stock is parallel, cutting a socket or tenon from either side of that element will center it x default.
No measureing no diddly, just set your fixturing so an equal amount of stock is whacked using both edges of your sample. That may introduce a climb cut if routing so pay attention to the direction of feed.
