Wood Faced hammer

I have a mallet from Lee Valley (http://www.leevalley.com/en/wood/page.aspx?p=50229&cat=1,41504,43688)that has wooden faces and I need to replace them. Anyone know how to remove the old wood. I presume any hardwood would work to replace.
