angle of cut on molding blade

I'm having some molding blades forged by a Smith (a living 18th century project) and I need to tell him what the cutting angle is on the knife. I'll be parking these in my machine lathe tool post and approaching the work piece directly as in machining steel - so undercut is going to be important. What angle are molding cuter head blades usually ground?

30 degrees is a good number.
