I am making a knotty pine wall cabinet approx. 32" high by 48" wide with sliding doors. I cant seem to locate any quality 1/4" knotty pine plywood, and if I could, I can't guarantee it will be flat enough to use for sliding doors, so I'm considering alternatives:
1. 1/4" solid wood doors?

2. Cutting some veneers and laminating 1/4" mdf? (I'll be making the door track, so I could accommodate the added thickness)

Any suggestions?

Perhaps consider thicker than 1/4" solid doors, if you're planning on 1/4+" grooves in your tracks is there any reason you can't rabbit or "tenon" the door tops and bottoms down to 1/4" to fit the track

Thats a good suggestion, and would work, but I don't have a whole lot of confidence in the stability of #2 common pine available to me.

I think the MDF/Veneer is the best option for stability, any solid wood door will move to much-and not the way you want it! WoodCraft sells it: http://www.woodcraft.com/Product/2008675/29816/Knotty-Pine-4X8-Veneer-Sheet-3M-PSA-Backed.aspx?refcode=05INFROO&gdd=404403
