Here's another piece of wood I pulled out of a dumpster. Can anybody identify it for me? I thought it was cherry at first, but the color doesn't seem quite right (said the colorblind man), and it may be a little too heavy. Hickory perhaps? There is some spalting on the back side (second picture). This piece is about 1 3/4 x 6 x 18

It sure looks like cherry to me. The back looks like sap pockets, not spalting from the photo. Try covering a part of it with something to block the light, set it out in the sun and see if you get a color change.

I have TWO cabinet shops near me, and I stop by their dumpsters regularly. One of the shops even had a bin outside at one point with "firewood". I got quite a bit of useable wood from that bin. But they quit doing that.

If you've ever worked with Cherry, the smell when you cut it is unmistakeable, much like oak.

Cut a piece and give it the old nose test. It could be Red Birch, but the smell will tell ya.

And, since you got it at a professional cabinet shop, one of the Exotics mentioned above by Mark is probably a little far reaching.
