Are there good combination countersink-and-drill-bits that have a fixed profile - i.e. ones that have no depth limiting or a fixed depth setting? I hate fooling with those little allen screws. I'd just as soon spend time searching for the right bit, since I do that all the time anyway.

Not in my view.
For max quality, latitude and spending, accept the fact that counter sinking and drilling are separate operations.

Late reply I know, but I was just milling around.

Stephen, I'm guessing that you are looking for ''solid'' counterbores and countersinks.
These are still available and standard in several sizes, and made to order for custom work.
www.woodworkerstoolworks.com (http://www.woodworkerstoolworks.com) has them and they will be added to their online store very soon.

I like the WL Fuller sets, not cheap, but very well made.

I can't see not having a way to adjust the depth though. You would have to have a heck of a lot of bits to account for all the different screw lengths you may want to use.
If you haven't tried the Fuller bits you may be surprised at how much better they are than the cheapy box store ones.

good luck,
