Hi All! My husband and I are new to building furniture and we came across a bed that we would like to make for our daughter but we cannot figure out how to get the corner edges that are attached to the rails attached to the head/footboards. We're fine with pocket holes but we'd really like to attach the other side as well but be able to remove it since we need the bed to come apart for moving. I've looked around on Rockler.com for hardware but can't seem to find anything that would work. Any help would be great!

If I read this correct you want the wings on the assembly you show to be removable. If that is the case then look at knock down fasteners. They are very similar to the stuff used in the disposable dorm room furniture available at lots of home centers. The good ones are very strong and attached to solid subtrate (good plywood) should give great service.

If you just need to attach the side rails to the headboard foot board like any other bed there are lots of options. I like the mortise in place style (http://www.cshardware.com/IW_Products.m4p.pvx?;MULTI_ITEM_SUBMIT) is very similar to what I used on my last bed.

Now for your problem.

Are you going to make the sides from MDF?
If so I would attach some strips of hard wood and just use normal bed rail hardware.

If you are going to use hard wood then just use normal bed rail hardware.

As I see it you're asked to join the rail to the headboard with pocket hole joinery alone? I use pocket holes a lot, but I've never seen bed frame joinery with pocket holes alone. Hmmmm. I guess that'll work. Simple. Have other creekers done that? Wish someone would chime in that has...make me feel better. Kids have a tendency to jump up and down on a bed placing lots of stress on those joints. At least mine did.

If I have understood your question correctly, I think Bill Huber's response has given you several good options. I made a bed a few years back and used these

to make it knock-down. One of the Rockler links was the same essential type -- they are easy to install and don't require mortising if you don't have the tools.
