I got these two book matched pieces of EAC cheap! I'm planning on making a live edge Dinning table.
What are the finish options I should consider. I would prefer a durable, Hi gloss finish.

High gloss finishes are difficult to maintain on soft woods like cedar. The finish will ding easily, and high gloss will make that visible.
I would start with a coat of dewaxed shellac--about 2 lb. cut. This will seal in cedar oils that could make other finishes not cure properly. Then I would use a good oil based varnish for the top coat. Most durable would be phenolic resin varnishes such as Behlen Rockhard, or Waterlox.
