I did the iron-on edge banding on a few shelves & after they were done decided I didn't like the look of it so I've removed the banding but now the glue remains. Is there an easy way to remove the glue so I can glue a different edge banding on ?

It's almost impossible to get the glue off. I just "skin a hair" off the edge of the shelf on the table saw. You could also do it with a router/flush trim bit/straight edge.

I usually do as David and run it through the tablesaw, kind of a pain as the glue gums up the blade, but it's fast.
If your comfortable with hand tool usage a sharp chisel works fine too. Takes a bit longer but it'll get you there.

+2 on the tablesaw. Good is it's quick. Bad is gummy blades.

+3 for the table saw. I didn't notice any gum on the blade, but I only did a half dozen pieces.
