Piano Hinge Use

I'm building one of the 3' tall jewlery chests with the sides that swing open. The plans call for piano hinges for both side sections and the top. For those that have used the piano hinges for this application, what is the best method of installing the hinges? Do you install them like a traditional hinge and mortise the edges? Thanks, as always.
