I'm trying to mix up my own batch of finish using the Sam Maloof recipe. It calls for equal parts boiled linseed oil, pure tung oil, and polyurethane varnish.

Any recommendations on the brand of poly varnish to use? Also I'm assuming I should use satin instead of semi-gloss as Sam recommends in his book since I usually don't like a glossy look on furniture.

Use whatever sheen you like. I've found that the semi-gloss doesn't quite come out semi-gloss with this formula. It's a bit less shiny than you would expect.
Any brand will work. I'd recommend something that is readily available locally.

I would suggest a quality NON-POLY varnish, instead of polyurethane varnish.

Poly is for floors.
