I used a water soluble dye on maple. Next step is to use BLO. Will I have problem using a water poly as the film finish? I am concerned that the water poly will mix with the dye and pull some of the color up.

I put a seal coat down over my WB dye if I don't want any of the dye to diluted, so it depends on the overall look you want. Sample pieces are a great place to start.

BLO will not move the water dye around. After the BLO has dried a sealcoat of dewaxed shellac is the best practice. Not so much to protect the dye; but to ensure that the WB finish will not have trouble sticking to the BLO.

WB poly is really an acrylic finish; the % of urethane is usually way below 10%, most are at like 3% or less urethane. Poly gets all the advertising money, so they like to use the words.
