I have finally built the sections for my miter station and the next step is putting the edging on. The sections are constructed of two layers of 3/4" MDF, glued and screwed. I was planning on using some 1x2 red oak to "wrap" the MDF to provide protection. I will cover with laminate after the edge is on. My question is, since I am attaching solid wood to MDF should I be concerned with the movement of the solid wood? Am I overthinking this? Could I just glue and nail the edging on, then cover it all?

You can just glue and nail the edging on, then cover it.

This is 5-6 years old & done this way.
