What is the breaking point between using a single door or splitting it into 2 doors? I have a ~24" wide opening.

I think it depends on the application. The door will be plenty strong, but I find anything over 18-20" awkward for cabinets, especially overhead. A 24" cut in half is a 12" door which is wide enough to look just fine. 24" causes you to have to take a step back when you open the door.

Commercial cabinet manufacturers (like Kraft Maid, Wood Mode, Medallian, etc.) seem to use a 24" wide cabinet as the transition between one or two doors. That is, a 24" wide cabinet is usually offered with either one 24" door or two 12" doors. Cabinets starting at 27" wide are always two doors.

Sometimes a single 24" wide door looks better when butted against a 48" cabinet that has two 24" doors. It really depends on the overall cabinetry design. As a stand alone cabinet, or adjacent cabinets that are less than 36" wide, two 12" doors would probably look better.
