What is the difference in profiles when making raised panels for furniture i.e. dressers and armoires compared to what I see referred to as kitchen cabinet sets is there a preferred panel profile when doing furniture rather than the standard cabinet for kitchens?

It's all about style...and size. Use the profile you like and pick a size that's appropriate for the scale of the project.

It is purely subjective. If you find a pattern you like, use it everywhere. Maybe the LOML will like that the raised panels in the kitchen match the bookcase or china cabinet in the dining room? :)

The kitchen door sets assume that the raised panel will be 1/4 inch thick at the edges.

The smaller box sets assume that the raised panel will be less - I think 3/16 but it might be 1/8 (I am out of town at the moment so can't go measure)

The door sets apparently have a 1/2 inch panel edge (I don't have that one)

The size of the moulding and the width of the raised panel cut vary proportionally, too
