I'm wanting to put some inlays in my end grain cutting boards. The inlay inserts would be long grain. Do you think it would work and would I have a problem with wood movement?

I have a couple long-grain walnut strips 1/4" wide x 1/2" deep running at odd angles through the surface of 14" x 24" hard maple butcher block cutting board. Been there for couple years. No issues so far.
