I have someone that wants a table like the one I built for myself.
BUT instead of using a veneered ply for the panels they want it made from all hardwood(likely walnut)
I'm not sure but I see some potential problems with the 30" wide edge glued panels not staying flat over time.
Only solution I can think of is having breadboard ends at both ends of each panel.
Good idea?,, Other suggestions?
TIA

Definitely you don't want the same frame going al the way around. Breadboard ends that attach via slotted holes in the tenons ,allowing for wood movement would probably be the best idea.

Brian will your design allow you to cut the end of the pallel and fold it over and glue it back on? This will give you a look of a thicker panel and and end grain for the end of each panels. I did this in my high school shop class on a solid Mahogny coffee table and it never seprated or cracked. 30" panel could move as much as 1/8 over the seasonal changes.
