There's a great book by Willie Sundqvist (http://www.amazon.com/Swedish-Carving-Techniques-International-Classic/dp/0942391454). I guess it's not in print any more, but I've checked it out of the library. It's probably also available from other sources.
Do a search for dough bowls. That might get you more information.

I think an adze, scorp, and some large gouges wood help with the hollowing out the vessel
