What differences do single or double flutes make in router bits?

Seems like the more flutes [blades] the more cuts per revolution and the smoother the cut?

Single flutes allow for more aggressive cutting.

If we are fixing the speed on the router for both bits:
I think the more flutes, the better the results but the slower the cut.
The less flutes, then the faster the cut but the finish will be a little more rough. Perhaps because it will have better chip removal.
I think it can compare to saw blades.

More flutes = more chops/minute at the expense of deflection.
More flutes, less metal in the web = more delection.
Stick with 2 flutes.
