Our family is looking for a couple of "good" granola recipes so we can make our own instead of spending a bunch of money buying the pre-made stuff.

I've never made granola, but I love to cook. I grabbed this recipe off one of my favorite recipe website...... allrecipes.com

8 cups rolled oats
1 1/2 cups wheat germ
1 1/2 cups oat bran
1 cup sunflower seeds
1 cup finely chopped almonds
1 cup finely chopped pecans
1 cup finely chopped walnuts
1 1/2 teaspoons salt
1/2 cup brown sugar
1/4 cup maple syrup
3/4 cup honey
1 cup vegetable oil
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
2 cups raisins or sweetened dried cranberries

DIRECTIONS


Preheat the oven to 325 degrees (http://allrecipes.com/Recipe/Megans-Granola/Detail.aspx#) F (165 degrees C). Line two large baking sheets with parchment or aluminum foil.
Combine the oats, wheat germ, oat bran, sunflower seeds, almonds, pecans, and walnuts in a large bowl. Stir together the salt, brown sugar, maple syrup, honey, oil, cinnamon, and vanilla in a saucepan. Bring to a boil over medium heat, then pour over the dry ingredients, and stir to coat. Spread the mixture out evenly on the baking sheets.
Bake in the preheated oven until crispy and toasted, about 20 minutes. Stir once halfway through. Cool, then stir in the raisins or cranberries before storing in an airtight container.

Okay Dennis, here you go:
13 year granola

(When my brother passed along this recipe to me, it was named 10-year granola. The lady who wrote it, claimed to have worked with it 10 years before settling on the ingredients. We spent a few more years tweaking it for ourselves, and so I thought a name change was in order.)

Preheat Oven to 275-300 degrees Fahrenheit

Mix together:

6 Cups Rolled oats (Large flake oats, NOT quick oats)
2 Cups Rye flakes (or, if you can get them, 1C wheat flakes + 1C Rye flakes)
1 Cup nuts (We use almonds, unchopped. Chopped if you like)
1 Cup Sunflower Seeds
1/2 Cup sesame seeds
1/2 Cup Whole Wheat Flour
1 Cup brown sugar (fairly tight packed)

Option: 1/2 Cup ground flax -- we buy bulk flax seed and grind it up in a coffee grinder. If you don't grind it, it goes right through you, which is kind of pointless

Mix up the dry ingredients

Add:

1/2 Cup Oil
1/2 Cup Honey
1 Tblsp Artificial Vanilla

Mix well, and dump it into a large roasting pan. We use a foil turkey roasting pan.
Roast for 1hr. Every 15 minutes, take it out and stir it well.

I usually eat it with some Dark raisins thrown through it (Thompson/California), but LOML prefers Sultanas. No accounting for taste! This has pretty much become our main granola.

Another good one is the "Peanut Granola" from the more-with-less cookbook (http://www.amazon.ca/More-less-cookbook-Janzen-Longacre/dp/083619103X). That one is heavy on the peanut-butter, so if you don't like peanut butter, you won't like it. She actually has a whole section on making granola in that classic book.

Lee's Double Duty Granola

A few years ago, I got tired of paying so much for those small boxes of granola. Reviewed several dozen recipes (I collect cookbooks & recipes), worked out the general theme and came up with my own version. Be sure to review the notes that follow the recipe.

Pre-heat oven: 300F.

1/2 c honey
1 tbsp molasses
1/2 c water
1/2 c brown sugar
1 tbsp canola oil
2 tbsp vanilla

Combine 1st 5 ingredients in a saucepan. Heat and stir until sugar dissolves. Remove from heat. Add vanilla.

4-5 c rolled oats (Old-Fashioned oats - don't use quick)
1 c wheat germ
1/2 c sunflower seeds
1/2 c flax seed - I use Bob's Red Meal Whole ground
1/4 c instant non-fat dry milk powder
1/8 tsp salt (2 small pinches)
1/2 c Grape Nuts Cereal

In a large container (this makes a big batch) mix these dry ingredients. Add the cooled syrup, mix well. Spread mixture on 2 parchment lined baking sheets. Bake for 30-45 minutes. Stir every 15 minutes and rotate pans. Watch carefully, the last 15 minutes. Remove when mixture is dry and golden brown. Baking time will vary. Remove from oven and let cool.

2 c dried apple, chopped
1 c dried dates, chopped
1 c walnuts, chopped
1 c almonds, toasted, chopped
1 c raisins

Mix fruit and nuts with cooled oat mixture. Store in air tight container. Will keep approx 1 month in a cool dark place.

Notes:
1 - Either hand chop the fruit/nuts or run through food processor, Depends on how coarse you like these ingredients. Cut the dates into quarters, if using in food processor. Use quick pulses at start with these.

2 - To toast nuts, pre-heat oven 350. Spread nuts on a single layer on a parchment lined sheet pan. Bake approx. 10 min, stirring at least once. When browned and lightly fragrant, remove from oven and cool before chopping. Caution: watch carefully, these can burn easily.

3 - If you use 5 or more cups of oats, you may need to add more water to the syrup. (1/4 - 1/2 c)

4 - If you use a lot of this, make multiple batches, during the same cooking session. Work up the second batch, while the first is cooking. Big time saver, as you already have all the ingredients out and only one clean up to do.

5 - Make substititions, additions, substractions, based on what you like and what you have on hand. Add, swap 1/2 - 1 c of: dried cranberries, cherries, pineapple, papaya, figs, bananas, apricots, silvered almonts, peanuts, unsweetened coconut, sesame seeds (1/4-1/2c), pumpkin seeds, soy nuts.

Substitute 1 tsp to 2 tbsp almond extract (depending on your taste).

6 - Double Duty!
Make a batch of this and mix with a large box of plain high fibre cereal such as flakes, oats, or a combination. Improves the flavor of those plain ones, adds extra nutrition, and saves money when compared to those expensive "granola" type cereals.

7 - A popcorn tin type contain works well for cereal /granola combo storage. Leave an inexpensive 1 c measure in the tin easy serving.

8 - Mix the granola recipe with yogurt. Sprinkle over ice cream. Incorporate into bread recipes.
