I am making a shallow pantry (9") where a standard door would impinge on the exisiting doorway a bit too much, is there some sort or sliding door hardware that would work ? all I have seen is pocket door stuff and that is too big. I also thought of using drawer slides somehow.

I'm not sure I understand your problem. But maybe 270 degree hinges would solve it. They allow the door to open all the way 'round to hang flat to the side of the cabinet. Here's one example -- http://www.hardwaresource.com/Store_ViewProducts.asp?Cat=1741 -- but there are many kinds.

Make it a pull out and just attach the door to the pull out shelving unit.

I guess the best way to descibe it is I want to push the door parallel to itself, to the left because if I stand in front of it there won't be any room - think pocked door type opening

Would a flipper door slide work?

nope as the cabinet is only 9" deep but 22" wide plus it would make it difficult for the sheves too.

I've seen entertainment centers designed so that when the doors are closed (pushed together), they cover the TV stuff and shelves are exposed on the left and right of the doors. When the doors are opened, the TV stuff is exposed, and the shelves are hidden by the doors. Is this what you are thinking? I've even seen these electically powered. Is this what you are thinking of?

Here are example pics

Would a bi-folding door work?

It is not as complicated as it looks.

I am not sure I still understand but could you put a full extension drawer slide at the top and the bottom. The door would not seal very good but it would hide anything in the cabinet.

Just have a notch at top and the bottom for the rail to slide out in, it would only have to be on one side. Add and extra board at the top and bottom to mount the slides on.

It sounds to me like you just need a simple sliding door track. I make my own out of hard maple... just a couple of dado cuts ("shoji" style). You can also find alum. track or even that plasticy crap like this:
