I was wondering if it is possible to scan an image into Adobe Illustrator and change it to a vector image?

Yes, from Illustrator CS and newer you can insert any image and use the new trace feature. It's configurable and works very well.

One more question.

Can I send the image stright from the scanner to AI?
For instance I can import right from the scanner into Photoshop, but I can't see how to do that in AI.

Illustrator places bitmap art instead of importing and I've never seen an Illustrator plugin that would scan to a placed image. There may be a Twain option to do it though.

Yes, it's not a big deal to scan with whatever software comes with the scanner. Just save and then place. Not a bad idea to keep the image as a separate file anyway.
