The last time I finished a piece of furniture (Armoire) that stores fabric or clothes, I messed up. I used a polyurethane. It still smells!! After 10 years.... I don't want to make that mistake again.

I have read where shellac dries fast and doesn't smell inside of drawers.

What method or finish do I use?

Shellac or a water borne product will do just nicely. Or...no finish at all. There is no law that says you have to have a finish on the inside of your blanket chest!

Anything non oil base.

Shellac is fine, actually very good. Waterbase finishes like Target USL is fine as is no finish or just wax.
