Clear of color makes no difference, it's the viscosity that makes the difference. I'm seldomly pleased with spraying polyurethane varnish. The first thing you notice is the hair on your arms get sticky. The material sprays wet and stays wet flying around the spray booth. You have to be impeccably accurate with your spraying technique and settings or you will get runs in the finish like you wouldn't believe.
There are already two existing threads on the Graco Ultra Quickshot. The answer to your question is yes, you can shoot clears just fine with the correct tip. Jason Bent has a good video on that. (Bent's Woodworking on the 'Tube)
