I think several folk have made recommendations in past threads. (Jessica, probably Brian, maybe Derek, and I'm sure many others I'm forgetting.)
One source, that knife folk recommend, is Maxim at Japanese Natural Stones. He's based in Denmark and recommended worldwide. (Of course, if you speak Japanese many sources directly from Japan open up.)
