Depends on the specific product consistency and your spray technique, but in general, any of the water borne acrylics should yield a good finish in 2-3 coats with proper surface preparation, similar to other non-water borne sprayed finishes.

I spray 99% of everything with 1 light coat of about 1# sealcoat and two coats of USL.
I can't tell you how heavy I am spraying since I still haven't come up with a mil gauge but not heavy enough to sag on a vertical piece.

I typically put on some shellac and 2-3 ~2 mil coats of USL. A wet film thickness guage is a handy thing to have - it really helps you be able to say something definitive about the coats you are laying down if you are trying to replicate a procedure or diagnose a problem.
